Raw pumpkin carob pie (nut-free). I know it's only July... but making a fully raw pumpkin pie has always been niggling at the back of my mind 🎃. ⠀

It took several tries to finally get the right consistency as without the right setting agents, it tends to be runny and not give nice slices. The main ingredients for this raw pumpkin pie are semi-dehydrated pumpkin (kabocha), coconut meat, coconut oil, cacao butter, 1% agar gel (to reduce amount of oil), lecithin. I'm not keen on the traditional pumpkin pie spice as I think it overpowers the delicate flavour of pumpkin. I kept it simple with fresh ginger juice, pinch cloves, and alternate layers with carob to break the monotony with a malty molasses flavour. ⠀

Have you tasted raw pumpkin? It is predominantly sweet, slightly vegetal and grassy. Cooking dulls its bright flavour but adds caramelisation. How do you like your pumpkin pie? 😛 ⠀
