Furikake is a Japanese seaweed sprinkle that brings a mineral-rich, savoury sparkle to dishes. Iodine-rich from multiple sea vegetables, this blend can help support thyroid health. The basic ingredients are nori, sesame seeds, salt, and sugar. Typically, bonito flakes or shaved dried fish are used. In this plantbased version, nutritional yeast contributes to the umami flavour in place of bonito, and also adds vital vitamin B12. Play around with flavouring variations such as wasabi or shiso, local herbs, or go zero-waste and include spent dried tea leaves!

Ingredients
- 8 sheets nori
- 1/2 cup dulse flakes
- 1/4 cup nutritional yeast
- 1/4 cup activated sesame seeds, lightly toasted
- 3 tbsp activated sunflower seeds
- 1 tbsp hemp seeds
- 1 tbsp gochugaru (korean chilli flakes) (or a pinch of regular chilli powder)
- 1/2 tsp Himalayan salt
- 1/2 tsp coconut sugar
Instructions

Process the nori sheet in a spice grinder to a coarse powder. Transfer to a small bowl.

Pulse the seeds in the grinder until broken into coarse pieces. Be careful to pulse in brief spurts so you don’t turn it into fine powder. Add to the bowl, together with all the remaining
ingredients, and mix well. -
Transfer to an airtight container and store at room temperature for up to one month.

Add as a garnish to dishes where you want a savoury, umami taste, for example, salads, congee.
